This cuisine is produced from a heated cooking process repeatedly with coconut milk for hours until dry and solid black color. Moreover, rendang can last for weeks. Rendang which is cooked in a shorter time and the coconut milk has not dried up called Kalio. Kalio has a light brown golden color.
The basic ingredients of rendang are meat, coconut milk, and a mixture of a variety of distinctive spices. The spices are such as pepper, lemongrass, galangal, turmeric, ginger, garlic, onion, and other spices. The uniqueness of Indonesian rendang is using the natural herbs. The natural herb is antiseptic and killing pathogenic bacteria as a natural preservative.
Garlic, onion, ginger, and galangal are known to have strong antimicrobial activity. Not surprisingly, rendang can be kept one to four weeks. The process of cooking rendang takes many hours. The pieces of meat are cooked with herbs and coconut milk in the proper heat. Then, it is stirred slowly until coconut milk and seasoning absorbed the meat.
After boiling, the fire is reduced and stirred until the coconut milk thickens and dry without burning or destroying the meat.
